Garlic Rosemary Vegetable Bowl

These rosemary vegetable bowls were AMAZING. The combination of garlic, rosemary, olive oil with fresh vegetables was so good and I love the variety in color giving us a wide range of vitamins and minerals. I’m a sucker for brown rice and will eat it whenever I can but especially love using it as a base for vegetable bowls. This rice dish, in particular, was made with fresh rosemary we grow on our deck.

This bowl has rosemary brown rice, garlic and rosemary roasted sweet potatoes, roasted cauliflower and eggplant, sauteed garbanzo beans, zucchini, and broccoli topped with hummus and a little basil. Combinations like these make me never want to give up eating vegetable bowls and prove why I have been on a veggie bowl kick for almost a year!

Garlic Rosemary Seasonal Vegetable Bowl with Brown Rice, Fresh Herbs, and Organic Hummus

  • 1 cup uncooked brown rice
  • 3 medium sweet potatoes
  • 1 head cauliflower
  • 3 mini eggplants (or one regular one)
  • 1 head broccolini
  • 2 zucchinis chopped in ½" pieces
  • 1 15oz. can organic garbanzo beans
  • 4 tbsp hummus of your choice
  • 1 head garlic
  • 5 sprigs of fresh rosemary (or 1-3tbsp dried)
  • 5 tbsp olive oil
  • 1 tsp sea salt
  1. Preheat oven to 375
  2. Peel garlic and chop rosemary
  3. Simmer brown rice with 2 cups boiling water, 1tsp chopped rosemary and ¼tsp sea salt for 45 minutes
  4. Wash and chop sweet potatoes, put on a baking sheet, coat with olive oil, add ¼tsp sea salt, 3 chopped (in half) cloves of garlic, and 1 tsp fresh chopped rosemary, bake for 30-40 minutes or until just browned
  5. Wash and chop cauliflower and slice eggplant in ⅓" rounds, place on a baking sheet and add olive oil and sea salt to taste
  6. Wash broccolini, chop the bottom of the stems off, and steam until stems are soft
  7. Simmer 1tbsp olive oil in a saucepan, add 3-4 chopped cloves of garlic, zucchini, broccolini, and garbanzo beans and cook for 7-10 minutes
  8. Place all ingredients in a bowl with hummus on top and enjoy!
